A creamy and crunchy sushi-inspired salad made with imitation crab, cucumber, and mayonnaise. Quick, fresh, and perfect for warm-weather meals.

Ingredients

1 English cucumber, julienned

1 cup imitation crab, shredded

34 tbsp mayonnaise (preferably Japanese)

1 tbsp rice vinegar

1/2 tsp sesame oil

Salt & pepper to taste

Sesame seeds for garnish

Optional: nori strips, avocado, cooked sushi rice

Instructions

  1. Julienne the cucumber and shred the imitation crab.

  2. Combine both in a mixing bowl.

  3. Add mayonnaise, rice vinegar, and sesame oil.

  4. Mix until evenly coated.

  5. Season with salt and pepper.

  6. Garnish with sesame seeds and optional toppings.

  7. Serve chilled or over rice.

Notes

Use Greek yogurt or vegan mayo for a lighter version.

Chill for 30 minutes for enhanced flavor..

Great served in lettuce cups or sushi bowls.
