Ingredients
Scale
-
For the Beef Tenderloin:
- 2 beef tenderloins
- 2 tablespoons olive oil, divided
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and fresh ground pepper, to taste
-
For the Honey Garlic Glaze:
- 4 cloves garlic, minced
- 1/4 cup honey (omit if keto)
- 1 tablespoon Sriracha (or any hot sauce of choice)
- 3 tablespoons low-sodium soy sauce (or coconut aminos for paleo)
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
Instructions
-
Preheat Oven:
- Preheat the oven to 375˚F (190ºC).
- Line a baking dish with aluminum foil or parchment paper and set aside.
- Pat dry the beef tenderloins with paper towels.
-
Prepare the Spice Rub:
- In a small bowl, mix paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper.
- Rub this spice mix all over the beef tenderloins.
-
Sear the Beef:
- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Sear the beef tenderloins until browned on all sides, about 3 to 5 minutes per side.
- Transfer the beef to the prepared baking dish.
- The goal is not to cook it fully but to create a flavorful crust and lock in moisture.
-
Make the Glaze:
- In a bowl, whisk together garlic, honey, soy sauce, mustard, Sriracha, and remaining olive oil.
- Brush this mixture over the browned beef tenderloins, reserving some for serving.
-
Roast the Beef:
- Bake for 15 minutes, then remove from the oven.
- Tent a piece of foil over the beef to prevent burning while ensuring even cooking.
- Return to the oven and continue to roast for another 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (62°C) for medium.
- Use an instant-read thermometer to check for doneness.
-
Rest and Serve:
- Remove from the oven and let the beef rest for 10 minutes, with the foil on top.
- Slice against the grain and serve, garnished with rosemary, orange slices, and the reserved glaze.
Notes
- For a deeper flavor, marinate the beef with the spice rub for a few hours before cooking.
- Adjust cooking time depending on your preferred doneness.
- Serving Suggestions: Serve with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
