My name is Noura, I’m 32, originally from the UK, and I now call the vibrant, sun-soaked city of Dubai my home. I’ve always believed that food has an uncanny way of connecting people—across cultures, across tables, and across time. Growing up in a cozy London flat filled with the aromas of my mum’s roast dinners and my nan’s scones, I never imagined that one day I’d be experimenting with za’atar, sumac, and saffron under the warm Dubai sky.
My culinary path wasn’t paved through fancy schools or five-star kitchens. It was carved through curiosity and a slightly chaotic love of flavor. I started out just wanting to recreate dishes that reminded me of home, but soon I was tweaking recipes, blending British comfort with Middle Eastern vibrance. I once turned a classic shepherd’s pie into a spiced lamb version with a tahini mash top—and to this day, my friends beg me to make it.
What I love most is the freedom to play. Some dishes flop—I’ve had more than my fair share of burnt edges and over-seasoned soups—but the joy is in the trying. I cook with instinct, guided by scent, texture, and taste. Dubai has gifted me a pantry of inspiration: dates so rich they taste like caramel, fragrant spices from the souk, fresh herbs that make every plate sing.
Cooking, for me, is about storytelling. Each meal I prepare is a reflection of where I’ve been, who I’ve loved, and what I dream of. I want to share that journey with other women—those who find themselves staring at a recipe wondering, “Can I really pull this off?” The answer is yes, and even if you don’t the first time, the story is still worth telling.
